but…. Her voice literally changed after Under My Skin. 

Imo, her voice in this song is no higher than it was the Best Damn Thing or Goodbye Lullaby days. her voice started to change around TBDT, becoming higher by comparison to let go and under my skin,  but hasn’t really changed much since in terms of pitch.
 

While her vocals are incredibly strong (and arguably stronger today than back in the Under My Skin Days even) it’s now got a more nasal quality to it that you can mainly only tell when hearing her live. this only started after she got diagnosed (and seemingly recovered) from Lyme. 

I’m not sure if this nasal quality has changed but this was the case for the Head Above Water era live performances.

The high notes in the chorus of Bite Me really aren't any different from the notes she was hitting in the What The Hell chorus 

or Rock and Roll
